I never checked the thickness of the drive on the X220T. I used a Intel X25M on my S10-3T and now I use a Crucial Vertex 3 with my HP laptop. Usually I have to add an enclosure to them so they stay in the system and they have been 2.5 inch versions with 9.5mm thickness.
I really don't know how to help you out on this one... maybe you can google search the name of the SSD you want and check the dimensions to make sure that it will fit in. Scratch that... that's a bit stupid.
Compatible SSDs
Maybe we can search for compatible items with the X220T at Lenovo and IBM websites and find possible SSDs that will fit, and determine what their sizes are.
Based on the following Lenovo and IBM pages we can determine the correct SSDs for the X220T.

So... just like you said it's a 2.5 inch SSD with 7mm height. It seems that several new Lenovo systems are using these dimensions. This is messing with people's brains big time.
The "official" Intel 160GB one is priced very high at over $400:
One Alternative
An alternative would be the Intel 320 Series SATA which should work and should be a lot cheaper.
Trying to find 7mm SSDs on web stores won't be too easy, sometimes search engines will give you better results. Yes most places don't list their drives as "2.5-inch SSD 7mm".
Another Way
It's hard to find 7mm SSDs, but some of them can be modded from the 9.5 to 7mm. Like this guy did

Someone managed to stick a 9,5 mm SSD (OCZ Vertex 2) into a X220 Tablet.

The new Samsung 830 SSD is also 7 mm, and is to the best of my knowledge the only SATA 3 SSD that doesn't need modification to fit in a 7 mm slot.
